Paxton The Vale Cabernet Sauvignon 2008

The Paxton family have adopted biodynamic principles when making their wines and were the first Australian wine company to join 1% For The Planet (giving 1% of their sales to fund environmental causes). Therefore, there is lots to love about The Vale besides the wine – it is better for the environment.

Getting back to the wine, it is ripe, full of flavour and pure fruit.  There is perfumed liquorice, mint and molasses, mulberry & cassis and cloves and vanilla. The palate is round with finely grained tannins making it a well balanced wine that is generous of spirit (without being too generous of ‘spirit’ being a more moderate 14%).   While not quite full bodied, it certainly leaves an impression in its wake.
