The acid helps to lift the flavour and cut through the natural oil of the fish making the fish seem less oily. These foods often have added acid such as lemon and these wines will stand up to the extra acid very well.

Smoked salmon/trout – The delicate flavour of smoked salmon will require a wine with delicate flavours and again some acid to cut the oiliness of the salmon. It is no coincidence that the pink wines are often served with these dishes as the flavours and texture of rose wine and sparkling rose match nicely.
